Date Kebab Recipe (Hurma Kebabı)

Hello friends, today we will share with you a recipe for date kebab. Hurma kebab is a dish from the Ottoman palace cuisine. Since its appearance and shape are similar to dates, this dish is called date kebab.  It is obvious that the Ottoman Empire, which had ruled for almost 700 years, had a wide culinary culture. If we move on to the palace and kitchen system, it would be healthier to briefly touch on the parts of the palace kitchen instead of summarizing every part of the palace kitchen. This place called Matbah-ı Âmire was built during the reign of Fatih Sultan Mehmet the Conqueror in 1475-1478. Meals belonging to the sultan were prepared in the kushane kitchen, meals for the viziers of the council and the people of the harem were prepared in the special kitchen, and for the high-level women of the harem, in the Valide Sultan Kitchen.

In the Ottoman Empire, mutton was preferred more than beef. It is even known that a self-developed statesman complained that his stomach was upset due to the constant use of beef in kebab shops in the Ottoman Empire. With the latest research, it has been learned that goats and kids were also consumed in the Ottoman Empire. Chicken meat dishes are also not preferred, but it is a food consumed in the summer months. For a long time, it was believed that fish was consumed very little by the Ottomans, but as a result of the latest research on Evliya Çelebi, the Ottomans consumed fish in considerable quantities. Even II. There are also studies that show that Mahmut especially loves swordfish.
